Job description:

Duties & Responsibilities:

Strain management and fermentation research and development

  • Responsible for strain management and carry out the preservation and supply of strains required for production on time.
  • Understand the production operation to troubleshoot and solve problems related to koji production.
  • Maintain the strain quality at or above the standard level.
  • Review the current technical methods from the perspective of microorganisms, improve the strain management methods and enhance the fermentation capacity of strains.
  • Formulate strain research and development plans, optimize and improve the enzyme activity of strains, improve the technology and characteristics of strains in soy sauce fermentation, and improve the production efficiency and output rate of soy sauce.
  • Conduct raw material evaluation and document control/update related to fermentation.
  • Proactively initiating and following all R&D activities related to fermentation.

 

Technical Support

  • Provide technical supports on production issues, including pre-fermentation, fermentation and post-fermentation processes to ensure the products are safe and meet the required specification and quality.
  • Provide the technical support and training to stakeholders.

 

Lab Management

  • Manage and maintain laboratory operation, including the cleanliness and safety of laboratory, inventory and storage of consumables.
  • Maintain the function of lab equipment which includes preventive maintenance and calibration.

 

Administrative and Communication

  • Communicate with I&Q staffs and various departments to tackle problems, establish objectives and coordinate new projects.
  • Self-confident, pragmatic, and able to build consensus and facilitate change across organizational lines.
  • Analytical and strategic minded with excellent troubleshooting and communication skills, able to serve as an effective project champion to internal and external stakeholders.

   

Job Requirements:

  • Minimum 1-2 years of working experience in Food industry. Fresh graduates are welcome to apply.
  • University degree in Applied Food Microbiology / Food Science / Food Technology or related academic background.
  • Knowledge in microbial growth and its optimization/strengthening methods.
  • Good command of English and Bahasa Malaysia. Chinese literate is an added advantage.
  • Good knowledge of computer and data processing.
  • Willing to learn, adapt new working environment and continuous improvement.
  • Candidate must be willing to work in Bandar Enstek, Negeri Sembilan
